Jaipur Sojourn: The kachori

My native, Jaipur, is the land of upturned pointy moustaches and bright lehariya turbans.But that is not all that describes Jaipur, infact no narration can be over without talking about the delicious food that is available here. 
          My favourite street food in jaipur is not very popularly known but very delicious kadhi kachori.Whenever I visit Jaipur, I headout for a kadhikachori breakfast to the Shankar Namkeen Bhandar in Gangori Bazaar. The shop is a small niche in the wall, but boasts of 70 years of experiencein making the best kachoris in town. 
           
Whipping out kachoris in enormous quantity is not so easy but the cooks here have mastered the process over years.
One can't after all go wrong with the combination of a well seasoned, deep fried maida crust, nestled in which lies the most headyand hypnotizing mix of mashed potato and fried bits of finely chopped onions which is seasoned with a mix of house spices, bedbecked with flecks of red chilli powder .
The traditional way to eat this dish is kachori cracked open and immersed in a ladle full of clear yellow kadhi. A bite of this will give you the crunch and flavourthat is so authentic and you will be one in crowd, eager to get your hands on another serving of the heavenly kadhi kachori .
